    [herstellung] => Obwohl Waldhimbeeren Fruchtzucker beinhalten, werden sie üblicherweise als Geist hergestellt, da die sehr empfindlichen Aromen sonst im Gärtank schnell verloren gehen würden. Mazeriert in Neutralalkohol geben die Waldhimbeeren aber hervorragend ihre Aromen ab, sodass die anschließende schonende Destillation einen feinen Geist ergibt. Der Alkohol aus diesem Mazerat wird nach einer bestimmten Einwirkzeit in einer kleinen 130 Liter-Feinbrandblase ganz langsam wieder herausdestilliert, wenn der Alkohol nicht mehr neutral ist, sondern intensiv nach den süß-erdigen Aromen der Waldhimbeere riecht und schmeckt. In 100 Liter Neutralalkohol kommen 500 kg Himbeeren. Wir benötigen also 2,5 Kilo Himbeeren, um einen Liter des edlen Geistes mit 40% herzustellen. Die Filterung erfolgt über Aktivkohle. Bei der Abfüllung nutzen wir ausschließlich Wasser zum Herabsetzen. Es werden keine Aromastoffe oder Zucker zugesetzt, ebenso wird nicht gestreckt oder verschnitten.
