Freshly pricked and unpeeled, the shoots of this fine and noble vegetable are processed for our fragrant Asparagus spirit witch gives the appearance of a fine cream of asparagus soup. It is particularly suitable as an ingredient for an exceptional aperitif, pure to accompany a meal, for an asparagus sorbet or as a digestif.
This spirit has an earthy, fine, and typical asparagus scent - it is very intense, yet not intrusive. Like a fine asparagus cream soup. On the palate, it impresses with floral accents, its fine spiciness, and, clearly, the taste of asparagus.
The first-class asparagus spear is the basis of this exquisite limited edition spirit. The taste is not affected by the shape or breakage of the spears. Freshly harvested and unpeeled, the chopped asparagus tips are soaked in neutral alcohol. This process is called maceration, where the alcohol extracts the aroma from the asparagus. After a certain period of time, the alcohol from this macerate is slowly distilled again in a small 130-liter fine brandy still, until it is no longer neutral but smells and tastes like asparagus. We need half a kilo of asparagus to produce one liter of this noble spirit with 40% alcohol content. Our filtration process uses activated carbon, and we only use water to dilute the spirit during bottling. No flavorings or sugars are added, and it is neither diluted nor blended.
