Description
Our cherry brandy is a duet of the two sweet cherries Dollenseppler and Benjamini. Both cherry varieties originate from Baden and are grown specifically for distilling purposes. The slight bitter almond note in the brandy comes from the cherry stones, which are still co-fermented in the initial production steps. A full-fruited spirit that simply tastes like summer.
Sensory description
- In the nose, pure cherry aromas with a fine stone note, on the palate full-bodied and typical of the fruit - that's how our cherry brandy tastes.
Production
The carefully selected, fully ripe fruits are fermented for our cherry brandy with stones under acid protection and oxygen exclusion. The distillation is also done traditionally with stones using the rough and fine distillation process. This labor-intensive, double distillation in small copper stills and the careful separation of the "heart" preserves the flavors and results in a natural mildness. From 100 liters of cherry mash, we obtain 12.5 liters of 40% alcohol by volume distillate. In other words, we produce one liter of cherry brandy from approximately 8 kg of cherries. The filtration is done using activated carbon. Only water is used for dilution during bottling. No flavorings or sugars are added, and there is no dilution or blending.
