Description
Sein voller Körper mit Vanille- und Karamell-Noten machen diesen Piekfeinen Single Malt zu einem ganz besonderen Whisky-Genuss. Hergestellt aus regionalem Gerstenmalz, ganz frei von rauchigen Noten, wird er in unserer Brennerei nach dem Pot-Still-Verfahren auf kleinen Kupferbrennlasen doppelt destilliert. Seine Reifung erfolgt in Ex-Bourbon-Fässern, die extra für uns bei unserem lokalen Fassbauer auf 100 Liter umgebaut werden. Die Deckel sind neu gefertigt und frisch getoasted.
Sensory description
  • In the nose, this single malt impresses with aromas of vanilla and caramel, with a hint of oak. On the palate, notes of apricot can be detected. Soft and round with a slightly caramel sweetness. The finish is warm and long.
Production
With special pure yeast, the sweet wort made from regional barley malt is fermented under oxygen exclusion and acid protection, and double distilled. This elaborate, double distillation in small copper stills and the careful separation of the "heart" preserves the flavors and leads to a natural mildness. The freshly distilled barley brandy is aged for at least five years before being bottled, and the aging process is exclusively done in first-fill bourbon barrels. The barrels are converted into 100-liter barrels by the local cooper Krogemann, with new and toasted lids. Only water is used to reduce the alcohol content during bottling, and Bremen's drinking water is of excellent quality. No flavorings or sugars are added, and there is no dilution or blending. Since flavor carriers such as esters, proteins, and fatty acids are also removed during filtration, it leads to a change in taste. To avoid this "distortion," we do not use cold filtration. Our whisky is therefore unchillfiltered or non-chill filtered. The filtration is done without pressure using cellulose.
