Description

In 2017, we took our first steps into the world of smoked whisky. We relied on a special ingredient: Bamberg beech-smoked barley malt, which is not dried over peat fires but gently smoked over beech wood.

The difference between the smoky and smoked flavour is remarkable: beech wood provides a milder, more subtle aroma compared to the intense, earthy smoke we are used to from Scottish peat.

Only a single 100-litre cask was filled at the time. Now, after careful maturation for 7 years, we are presenting this exclusive single cask whisky in a limited edition - only 200 numbered bottles are available. With a drinking strength of 45% vol, the flavours unfold in perfect harmony and bring out the balance between delicate smoky notes and sweet malt flavours.

Production
The sweet mash made from Bavarian beech-smoked barley malt was fermented with special pure yeasts under exclusion of oxygen and acid protection and double distilled. This elaborate, double distillation in small copper stills and the careful separation of the ‘heart’ preserve the flavours and result in a natural mildness. The freshly distilled barley spirit matures for seven years before being bottled and is matured in a 100-litre fist-fill bourbon cask. Only water was used for the bottling process. The drinking water from Bremen is of outstanding quality. No flavourings or sugar were added, nor was it stretched or blended. As flavour carriers such as esters, proteins and fatty acids are also removed during the filtering process, this leads to a change in taste. To avoid this ‘adulteration’, we do not use cold filtration. Our whisky is therefore unchill filtered or non-chill filtered. Filtering is carried out without pressure using cellulose.
