Description

Our barrel-aged cherry brandy from the sweet cherry varieties Dollenseppler and Benjamini has with its golden color the taste of fine sweet cherries paired with a fine stone note. It gets its barrel note from our VAN LOON whisky barrels, in which it spends at least one year - our secret recipe for its multi-layered taste.

 

Sensory description
  • On the nose, pure cherry aromas with a fine hint of stone paired with the barrel note. On the palate, full-bodied and fruity with a fine hint of wood.
Production
Thanks to its particularly sweet aroma, the sweet cherry is wonderfully suited for distilling. Two sweet cherry varieties are used for our Piekfeinen Kirsch brandy - the stones, which remain in the mash for the entire fermentation period, provide the special finishing touch. Fermentation takes place under acid protection and oxygen exclusion. Distillation is carried out with the stones in the traditional rough and fine distillation process. The elaborate double distillation in small copper stills and the careful separation of the "heart" preserve the aromas and lead to a natural mildness. What makes this Piekfeine Kirsch brandy so special is that it is matured for at least one year in one of our emptied 100 litre VAN LOON whisky barrels. This gives the brandy its multi-dimensionality and golden yellow colour. We use activated carbon for filtering, and only water for settling is used for bottling. No flavourings or sugar are added, and there is no stretching or blending.
